WHere is a simplified version of a beverage from the seasonal menu. This is a batch premix that's loaded with flavours of a Christmas time, making it perfect for hosting a holiday party. Any leftover citrus syrup for morning drinks, puddings, or to make another batch of the drink.
Bikini Recipe
Makes enough for 10 people
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
For the Syrup: Put the listed items inside a pan, heat until it reaches a light boil, mixing to dissolve. Then, remove from the stove allowing it to cool fully. Transfer into an sterilised bottle, close it and store in the refrigerator, where it will keep for about a month.
Preparing the Cocktail Base: Pour every spirits and syrup in a big jug, leave to sit for 60 minutes, then pass it through best through muslin, to ensure it's completely strained.
For serving: Pour 85ml of your batch mix into your cocktail shaker containing ice, and agitate lightly for one minute to chill. Filter into an frosted cocktail glass or equivalent, decorate with the cranberries adding the final touch using a light spray with the mandarin essence above the glass.
